


This wine comes from old vineyards with grapes exposed to the wind and sun, giving them complexity thanks to a slow and gradual maturation. Without added sulphites.

The oldest vineyards in the Valdibella are used for the production of Ninfa, trained as saplings. Production is low but the grapes are very healthy because they are exposed to the sun and the wind. As in all the old vineyards in the area, there are different types of Catarratto in the same estate, with a prevalence of the common one. This allows you to strengthen and enrich the vineyard even more, giving it complexity. Maturation is slow and gradual, the vine processes all the nutritional elements without forcing and concentrates them in the grapes, reaching the right maturation in September.

100% Catarratto
The grapes are harvested by hand and transported to the cellar in small baskets, where they are destemmed and kept in tanks at a low temperature (8°C). The following day, fermenting must is added (coming from grapes from the same vineyard harvested the previous week). Shortly before the end of the alcoholic fermentation, which lasts about twelve days, the wine is definitively separated from the pomace which is pressed. The wine will remain to refine on the lees until the following spring, before being bottled.

Colour: yellow with gold reflections. Smell: fruity notes tending towards pears and vegetal notes of cut grass. Taste: persistent mineral, good freshness, remarkable gustatory persistence and strong personality given by an important tannic structure that enhances the acid complexity.
