The grapes are harvested by hand and transported to the cellar in small baskets, where they are de-stemmed, crushed and macerated for a few hours before pressing. Subsequently, the decanted must is decanted and added with natural fermentation pied de cuvée (prepared in the previous days with grapes from the same vineyard). Fermentation lasts about 15 days at a temperature of 18 ° C. Subsequently, the wine is aged for the winter and the following spring in steel before bottling which takes place without any filtration to preserve its integrity and character.
