Bluefin tuna has always been the flagship product of Antica Tonnara di Favignana. Awarded by Gambero Rosso magazine as the best tuna in oil in Italy (No. 196, May 2008), it enjoys great success in the world of haute cuisine, earning a place of excellence among the Italian delicacies.
The bluefin tuna processed by Antica Tonnara di Favignana is a product derived exclusively from fresh fish caught between May and June, the period when this fish is in the best organic condition for processing.
Released in the Mediterranean after its long oceanic journey, it begins to feed on bluefish of the highest quality. This type of diet gives its flesh a unique flavor and the ideal amount of omega-3 fatty acids that make it unique.
The fishing of this type of tuna is regulated to preserve the reproduction of the species.
The caught tuna is transferred to the production plant the same day, where it is cut into steaks and left in iced water to promote bleeding and seal the fibers.
It is then transferred to large perforated steel baskets for steam cooking. Once cooked, the fillets are transferred to special ventilated cells that allow the fish to dry perfectly.
After completing the first crucial steps, the cooked fish is ready to be transferred to the packaging department, where expert and skilled hands transform the fillets into perfect fillets, which are then placed in glass jars or cans of various sizes.
After placing the tuna fillets in the container, a high-quality Nocellara and Biancolilla extra virgin olive oil, grown in the Belice Valley and cold-pressed, is poured over them.
This oil, in addition to perfectly preserving the fish fillets, perfectly complements the flavor of bluefin tuna, as this very special oil has a very low acidity that does not affect the natural flavor of the fish in the slightest.
The final step is to sterilize the jar in an autoclave. After cooling, it is stored in the warehouse to enjoy the maturation of a A year in which the fish will mature in oil and be ready to arrive on the most discerning tables.
Before opening, store at room temperature covered in oil. After opening, store in the refrigerator, always covered in oil.
