Extra virgin olive oil produced in western Sicily, cultivar of the Cerasuola variety; the olive tree is grown on hills to avoid water stagnation on soils of various nature, generally medium texture with a good presence of clay.
It has a significant longevity of qualitative characteristics and has the highest content of polyphenols.
We apply cultivation programs to increase biodiversity and minimize soil processing. We practice shredding of pruning residues and green manures of legumes. Generally we do not practice any insecticide or fungicide treatment. Sometimes it is necessary to intervene against peacock spot and in this case we practice an intervention with copper-based products, while against the olive fly we practice repellent treatments with kaolin or agricultural chalk.
Pruning and suckering are practiced every year. Harvesting is manual and takes place at the beginning of veraison; it generally falls between 10 and 15 October and continues until 15-20 November.
The ideal time is when the percentage of green olives is at least 70% of the total.
The extraction takes place within twenty-four hours of harvesting, strictly cold with temperatures below 27 °C. The extraction method is continuous cycle.
The conservation takes place in steel silos, in a cool place. The oil is decanted naturally and not filtered. It takes on a green color with golden reflections, with an acidity of less than 0.3%.
