Together with the classic Pesto alla Genovese, the Walnut Sauce is another typical recipe of the Ligurian tradition, with a rich and full flavor and a creamy consistency, suitable for seasoning many different types of pasta and in particular the traditional pansotti, or to be used in raw on bread for appetizers.
Although high in calories, the sauce is accompanied by some interesting properties deriving from the chemical composition of walnuts:
rich in mineral salts phosphorus, calcium, iron, sodium, magnesium, zinc, copper, manganese, selenium and potassium
rich in Vitamins A, B1, B2, B3, B5, B6, B12, Vitamins C, E, K and J
they also contain beta-carotene, lutein and zeaxanthin

which confer health benefits, in particular:
anticancer properties thanks to the abundant presence of omega 3 and antioxidants
protective of the cardio-circulatory system, reducing cholesterol levels
