Superior category olive oil obtained directly from olives and solely by mechanical processes.
The olives used for the production of Girolomoni oil are mostly of the Carolea variety (mainly because it allows for a sweeter and more balanced taste), Grossa di Cassano, Tondino, Dolce di Rossano.
Defoliation and washing take place with latest generation machines which, thanks to special flows of running air, are able to keep the olives intact during the various passages.
The olives thus cleaned and without residues are then crushed and placed in special steel tanks.
The olive paste thus obtained is then cold extracted and separated into three parts: water, pomace and the excellent extra virgin oil.
