


Alalunga tuna (Thunnus Alalunga) is caught off the coast of Sicily during certain periods of the year to ensure sustainability and the reproductive capacity of the species.
It is processed fresh using artisanal techniques and hand-packed in extra virgin olive oil.

The albacore is a pelagic fish from the same family as tuna. Its name comes from its long pectoral fins.
It feeds on oily fish such as sardines and anchovies. It can measure over 1 meter in length and weigh over 30 kg.
Its flesh is pink and prized, with a low fat content.
This tuna is fished only during certain periods of the year and with severe restrictions to ensure the sustainability and reproduction of the species.
The freshly caught tuna is transferred to our production facility the same day, where it is cut and left in iced water to promote bleeding and the closure of the fibers. At the end of this process, it is transferred to large perforated steel baskets for steam cooking. Once cooked, the slices are transferred to special ventilated cells that allow the fish to dry perfectly.
Once the first crucial steps are completed, the cooked fish is ready to be transferred to the storage department where the expert hands of our workers transform it into a unique product. the large slices into perfect fillets and place them in jars of different weights; Finally, an extra virgin olive oil from the Belice Valley cultivar is poured into the jars. This oil pairs perfectly with our tuna, as this unique oil, cold-pressed from the finest Nocellara and Biancolilla olives, has very low acidity and does not affect the natural flavor of the prized bluefin tuna in the slightest. Finally, the jar is sealed and sterilized in an autoclave. After cooling, it is stored in our warehouses to enjoy a well-deserved rest for about a year, a period during which the tuna matures in the oil and is ready to be served on the most discerning tables.
Before opening, store at room temperature covered in oil. After opening, store in the refrigerator, always covered in oil.
