Vinegar was already produced and consumed in Ancient Greece and Ancient Rome. Bacteria, in the presence of oxygen, ferment the ethanol contained in red wine, transforming it into acetic acid, the substance responsible for the acidic and pungent taste of the final product. Low in calories (it contains on average from 5 to 20 calories per 100 grams) so it helps those who want to lose weight, vinegar can be a valid help in the kitchen to give sparkle to simpler dishes and to save on other types of "heavier" condiments .
