Vinegar was already produced and consumed in Ancient Greece and Ancient Rome. The word "vinegar" itself derives from the Latin "vinum acrem" (literally soured wine), and was easily discovered since vinegar is nothing but the natural consequence of wine aging. Vinegar is a completely natural "flavoring" which is obtained thanks to the action of particular bacteria of the Acetobacter strain, which are 90% similar to the bacteria present in the intestine. For this reason, once in contact with the intestinal bacterial flora, the vinegar performs a disinfectant, purifying activity and prevents the formation of slag deposits and swelling. Furthermore, the presence of mineral salts (among which potassium stands out) helps fight retention and prevent cellulite. Bacteria, in the presence of oxygen, ferment the ethanol contained in red wine, transforming it into acetic acid, the substance responsible for the acidic and pungent taste of the final product. Low in calories (it contains on average from 5 to 20 calories per 100 grams) so it helps those who want to lose weight, vinegar can be a valid help in the kitchen to give sparkle to simpler dishes and to save on other types of "heavier" condiments .
