

The olives from our olive groves are harvested a few weeks later than those destined for oil. Between the green ones (Nocellara del Belìce) and the black ones (Giarraffa and Gioconda) a different degree of ripeness which is expressed in a more decisive flavor for the black ones and more delicate and aromatic for the green ones. Both pates, then, were embellished with the aroma of oregano.
