Among the various cereals, spelled is certainly one of the least common.
Its nutritional value is similar to that of common wheat: it contains proteins, fats, vitamins (A, C, group B) and acid phytic, mineral salts (calcium, cobalt, iron, phosphorus, magnesium, manganese, potassium, copper, selenium, sodium), fibers. Given its composition, it has anti-anemic, laxative, tonic and refreshing properties. It is characterized by a marked antioxidant action (selenium and phytic acid hinder the formation of free radicals).
The richness of fiber makes it useful in slimming diets, for athletes for the supply of iron and calcium and for those suffering from osteoporosis . From a botanical point of view it belongs to the genus Triticum such as wheat, in fact it takes the scientific name of T.monococcum, T.dicoccum, T.spelta.
It differs from durum wheat and soft wheat because the pericarp, i.e. outer layer, adheres to the grain as in barley and oats. Compared to soft wheat, it is a less demanding plant, since it adapts above all to relatively poor soils, it bears rigid climatic conditions therefore growing at high altitudes. It does not require weeding, fertilization based on synthetic products and other phytosanitary treatments. After having undergone the decortication process, it can also be consumed in grains, in place of rice, for example.
The spelled flour is excellent for any use and can also be substituted for soft wheat, it is free of gluten additions and other enhancers and is indicated for those suffering from food intolerances or for those who follow a vegetarian or vegan diet.
