This spice, native to the Mediterranean area and Asia Minor, is obtained from the small stigmas of Crocus sativus. It blooms only in fifteen, at most twenty days a year in which the flowers are harvested every morning at dawn. First we proceed with the separation of the stigmas, then we continue with their drying at a controlled temperature. In this way, they are stored in jars a few hours after harvest, so as to best preserve their aroma. It is a meticulous and accurate work from which such a precious spice is obtained: it takes about 120 flowers to obtain a gram of saffron.
