The annual production of Parmigiano Reggiano Vacche Rosse is around 15,000 wheels, compared to around 3,200,000 wheels of traditional Parmigiano Reggiano.
Every farmer, every head of cattle and every wheel is tracked and monitored by ANABORARE (National Association of Reggiana Cattle Breeders), which supervises both production and the finished product before it is placed on the market.

Thanks to the special characteristics of Reggiana milk and the long ageing process, Parmigiano Reggiano Vacche Rosse is richer in essential amino acids, mineral salts and proteins.
It is a privileged source of calcium and at the same time is lactose-free. All this in a concentrate of highly digestible nutrients.
For example, 50 grams of 30-month Parmigiano Reggiano Vacche Rosse contains the same amount of essential amino acids as a 200-gram steak, but unlike the latter, it can be digested in 30 minutes rather than 3 hours.
Furthermore, thanks to a diet based on green grass, Parmigiano Reggiano Vacche Rosse is naturally rich in beta-carotene and flavocytes and is a fundamental source of CLA (conjugated linoleic acid), whose benefits have an immunomodulatory and anti-carcinogenic action and promote lean body mass (muscle) at the expense of fat mass.
Parmigiano Reggiano Vacche Rosse is characterised by its distinctive straw colour, which comes from the cows being fed on green grass. It has a more intense but never pungent flavour,
