Dignity to the earth

In fifty years of history, the Girolomoni organic cooperative has given life to Gino's dream by building an organic Girolomoni pasta supply chain as it is today.

Italian organic wheat is grown in around 400 member farms, over 70% from the Marche supply chain.

The harvested wheat is ground in the Girolomoni mill on the Montebello hill, near Urbino, in the Marche region.

The semolina thus milled is then expertly mixed with only hill water in the adjacent Girolomoni pasta factory. The dough is drawn and rests for 7 to 12 hours according to the formats at a controlled temperature; only after slow drying which preserves the nutrients and enhances the flavors and aromas of the wheat does it become Girolomoni organic pasta which is exported all over the world.
