Kamut is an ancestor of durum wheat. From the point of view of cultivation it has not undergone changes for millennia. It is grown exclusively with organic and controlled methods, in harmony with the modern needs of a natural diet. Compared to common wheat, Kamut and the products derived from it contain noble proteins, unsaturated fats, minerals and trace minerals in very high quantities.
The selenium content (which protects the body thanks to its antioxidant properties) is also relevant, considerably higher than that of traditional cereals.
The flour obtained with Kamut is excellent for any use and can also be substituted for that of soft wheat, it is free of additions of gluten and other enhancers and is suitable for those suffering from food intolerances or for those who follow a diet vegetarian or vegan.

NATURAL stones are quarry stones. Ours, in particular, of French origin are renowned for their "hardness". Since they are not artificial stones, they must be periodically hammered manually to reach the right degree of roughness in order to obtain the best flour for each use and with the necessary technological characteristics ( damage to optimal starch, water absorption, etc.). They differ from the artificial stones currently on the market because they turn much more slowly and therefore do not overheat the product leaving the flours alive. The artificial stones are also not hammered.
